Swadesi Way’s Himalayan Forest Honey is harvested seasonally from the deep forests of Uttarakhand – Joshimath, Pauri & Uttarkashi by the farmer-owned Trishulii Collective of 500+ small farmers.
Collected by native Himalayan bees living in mud, wall, and log hives, and foraging freely on wild herbs, forest plants, fruits, and medicinal vegetation, this honey develops a complex, bio-rich profile with naturally strong antimicrobial properties. It is traditionally valued for medicinal and wellness use, consumed in small daily quantities to support immunity and overall well-being.
It is gently processed at low temperatures (40–45°C) and minimally filtered to retain its natural enzymes, pollen, antioxidants, and forest-derived bioactive compounds.
As a seasonal forest honey, its colour, taste, aroma, and texture may naturally vary with the changing forest flora. A true marker of unstandardised, pure honey.
What Makes This Honey Different?
-
From indigenous Himalayan bees, Apis cerana indica
-
Seasonal & multi-floral, shaped by forest herbs, fruits, and medicinal plants
-
Low-heat processed (40–45°C) to retain enzymes and antioxidants
-
Minimally filtered, preserving pollen and forest bioactives
-
Free from chemicals, additives, or adulteration
Farm to Plate Journey
Indica bees forage freely in biodiversity-rich forest ecosystems, collecting nectar from wild herbs, forest plants, fruits and medicinal vegetation. Honey is harvested only in seasonal months and never in winters, ensuring colonies remain healthy.
After harvest, the honey is processed in a hygienic facility using:
- Low-temperature processing (40–45°C)
- Minimal filtration
- No chemicals or additives
Purity is verified through HMF testing, pesticide residue testing and 13C isotopic test.
Why Minimally Processed (and not raw honey)?
Raw honey may sometimes contain wax particles, pollen clumps, or bee fragments, which may not suit everyone’s digestion or sensitivity.
Minimal processing makes it,
-
Safer and easier for daily consumption
-
More suitable for children and elders
-
While still retaining enzymes, pollen, and antioxidants
Note on Crystallisation
Crystallisation is natural process caused by honey’s glucose content. It does not indicate spoilage or adulteration.
To liquefy: Place the jar in warm water (not boiling).
