Detailed Journey from Milking to your Bilona Ghee

Milking & Butter Preparation at the Village Level

1. Every family owns 2–3 local Badri cows, with usually one lactating at a time.
2. 2–3 litres of milk is collected daily in each home.
3. Milk is filtered, boiled, cooled, and turned into curd.
4. Curd is churned using the traditional bilona method (wooden churner or hand blender).
5. Each churning yields 200–300g of butter.
6. Butter is collected in a steel container.

Butter Collection from Villages

1. Butter is collected from 47 villages, involving 350+ families.
2. Self-Help Groups (SHG) collectors gather butter in steel containers as per schedule.
3. Collection happens weekly (4 times a month).
4. About 100 kg of butter is gathered monthly.

Butter Handling & Storage at Processing Unit

Butter is sent to the processing unit from SHGs. To ensure the production of high-quality ghee, the following guidelines are followed for butter handling:

1. Butter is weighed, with batch & SHG details recorded.
2. Washed 2–3 times with potable water to remove curd or other impurities.
3. 100 ml sample taken for lab testing.
4. Cleaned butter is stored at -20°C in deep freezers, labeled with:a. Collection date
   b. Storage date
   c. Quantity

Ghee Production Process

1. 1 kg of ghee requires 1.5–1.6 kg of butter.
2. 35–65 kg batches are processed depending on demand.
3. Butter is gently heated to 107–109°C until milk solids separate.
4. Ghee is cooled down and filtered at 70°C using cotton mesh for clarity.

Packaging & Storage

• Packaged in glass jars.
• Store in a cool, dry place.
